10 minute Chili Oil Udon Noodles

200g udon noodles

2 tablespoons chili oil

1 tablespoon soy sauce

1 teaspoon sesame oil

2 garlic cloves, minced

2 green onions, sliced

1 tablespoon toasted sesame seeds

Optional: 1 cup of vegetables (e.g., bell pepper, bok choy, or snap peas)

Optional: protein (tofu, chicken, or shrimp) - pre-cooked

Instructions
 

Cook Udon Noodles: Bring a pot of water to a boil. Add the udon noodles and cook according to package instructions, usually around 3-4 minutes. Stir occasionally to prevent sticking.

    Prepare the Sauce: While the noodles are cooking, in a small bowl, mix together chili oil, soy sauce, and sesame oil. Set aside.

      Sauté Garlic: In a large pan or wok, heat a drizzle of chili oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

        Add Vegetables (Optional): If you’re using vegetables, add them to the pan and stir-fry for 1-2 minutes until they are slightly tender.

          Drain Noodles: Once cooked, drain the udon noodles and add them directly into the pan with the garlic and vegetables.

            Combine: Pour the chili oil mixture over the noodles. Toss everything together gently to ensure the noodles are well-coated in the sauce. Cook for an additional 1-2 minutes to heat through.

              Garnish: Add sliced green onions and toasted sesame seeds to the noodles just before serving. Toss lightly to combine.

                Serve: Plate the noodles in bowls, adding more chili oil on top if desired and garnish with extra green onions.
