200g udon noodles

4 tablespoons chili oil (store-bought or homemade)

1 tablespoon soy sauce

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon ginger, grated

2 green onions, chopped

1 teaspoon toasted sesame seeds

Optional: cooked protein (tofu, chicken, or shrimp), and vegetables (spinach, bell peppers, or bok choy)

Instructions
 

Cook the Udon Noodles: Bring a pot of salted water to a boil. Add the udon noodles and cook according to package instructions (typically 3-5 minutes) until tender. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Sauce: In a large mixing bowl, combine the chili oil, soy sauce, sesame oil, minced garlic, and grated ginger. Stir well to combine all ingredients evenly.
