8 oz (225 g) spaghetti or linguine

2 cups fresh spinach, chopped

1 medium lemon, zested and juiced

3 cloves garlic, minced

¼ cup (60 ml) olive oil

¼ cup (60 g) grated Parmesan cheese (plus extra for serving)

1 tsp red pepper flakes (optional)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Cook the Pasta: Boil a large pot of salted water. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

    Sauté Spinach and Garlic: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant but not browned. Then add the chopped spinach and cook until wilted, about 2-3 minutes.
