2 medium-sized apples, peeled and diced (preferably Granny Smith or Honeycrisp)

1 cup all-purpose flour

1/2 cup granulated sugar

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

1 large egg

1/2 cup milk

1 teaspoon vanilla extract

Oil for frying (vegetable or canola)

Powdered sugar for dusting

Start by peeling and dicing the apples into small, bite-sized pieces. Set aside.

    In a large mixing bowl, combine the flour, granulated sugar, baking powder, baking soda, salt, cinnamon, and nutmeg (if using). Whisk together until well combined.

      In another bowl, whisk together the egg, milk, and vanilla extract until smooth.

        Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; it’s okay if there are a few lumps.

          Fold in the diced apples until evenly distributed throughout the batter.

            In a deep skillet or pot, heat about 2 inches of oil over medium heat until it reaches 350°F (175°C). You can test the oil temperature by dropping a small amount of batter into it; if it sizzles and rises to the surface, it's ready.

              Using a tablespoon or a small cookie scoop, carefully drop spoonfuls of the apple fritter batter into the hot oil. Fry in batches, making sure not to overcrowd the pan. Fry each fritter for about 2-3 minutes on each side, or until they are golden brown and cooked through.

                Once done, use a slotted spoon to remove the fritters from the oil and transfer them to a paper towel-lined plate to absorb excess oil.

                  Allow the fritters to cool slightly before dusting them generously with powdered sugar.
