Ingredients

1 lb chicken breast, cut into bite-sized pieces

1/2 cup cornstarch

1/2 cup all-purpose flour

1 teaspoon paprika

1 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1 large egg, beaten

Oil for frying

For Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon lime juice

For Bowls:

2 cups cooked jasmine rice (or rice of choice)

1 cup shredded carrots

1 cup chopped cucumber

1 avocado, sliced

1 cup chopped green onions

Sesame seeds for garnish

Fresh cilantro for garnish

Instructions

Prepare the Bang Bang Sauce: In a medium bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth. Set aside.

Prepare the Chicken: In a large bowl, combine cornstarch, flour, paprika, garlic powder, salt, and black pepper. Dredge the chicken pieces in the flour mixture, coating each piece thoroughly. Dip the coated chicken into the beaten egg, allowing excess to drip off, then return to the flour mixture and coat again.

Fry the Chicken: In a large skillet or frying pan, heat oil over medium-high heat. Once the oil is hot (around 350°F), carefully add the chicken pieces in batches, being careful not to overcrowd the pan. Fry for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Bowls: In serving bowls, layer the cooked jasmine rice as a base. Top with the fried chicken pieces, followed by shredded carrots, chopped cucumber, avocado slices, and chopped green onions.

Finish with Sauce: Drizzle the Bang Bang sauce generously over the top. Sprinkle sesame seeds and fresh cilantro for garnish.

Serve Immediately: Enjoy your Bang Bang Chicken Bowls warm, mixing the flavors as you eat!
