Ingredients

1 lb (450g) boneless, skinless chicken thighs

2 tablespoons soy sauce

2 tablespoons rice vinegar

1 tablespoon honey

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon grated ginger

1 teaspoon Sriracha sauce (adjust to taste)

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 teaspoon lime juice

1/2 teaspoon salt

1/2 teaspoon black pepper

Bamboo or metal skewers (soaked in water if bamboo)

Instructions

Marinate the Chicken: In a bowl, mix together soy sauce, rice vinegar, honey, sesame oil, minced garlic, grated ginger, Sriracha, salt, and black pepper. Add the chicken thighs and ensure they are well coated. Cover the bowl and refrigerate for at least 30 minutes (or up to overnight for more flavor).

Prepare the Sauce: In a separate bowl, combine mayonnaise, sweet chili sauce, and lime juice. Mix until smooth and well combined. Set aside for serving.

Skewer the Chicken: Preheat your grill or grill pan over medium-high heat. Take the marinated chicken out of the refrigerator and thread each piece onto your skewers, leaving a little space between each piece for even cooking.

Grill the Skewers: Place the skewers on the grill. Cook for about 5-7 minutes on each side, or until the chicken is fully cooked through and has lovely grill marks. Be careful not to overcook, as chicken thighs can dry out.

Serve: Remove the skewers from the grill. Serve hot with the prepared dipping sauce on the side. You can also garnish with chopped green onions or sesame seeds for an extra touch!
