1 cup pearled barley

4 cups water or vegetable broth

1/2 teaspoon salt

1 cup milk (dairy or plant-based)

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 cup chopped nuts (almonds, walnuts, or pecans)

1/2 cup fresh or dried fruits (berries, bananas, or raisins)

Fresh mint leaves for garnish (optional)

Instructions
 

Rinse the pearled barley under cold water to remove any excess starch. Drain well.

    In a large pot, bring the water or vegetable broth to a boil. Add the rinsed barley and salt. Stir well.

      Reduce the heat to low, cover, and let the barley simmer for about 30-40 minutes, or until tender. Stir occasionally to prevent sticking.

        Once the barley is cooked, stir in the milk, honey or maple syrup, vanilla extract, and ground cinnamon. Adjust sweetness as desired.

          Increase the heat to medium and cook for an additional 5-10 minutes, stirring frequently until the porridge reaches your desired creaminess.

            Remove from heat. Serve hot in bowls, topped with chopped nuts, fresh or dried fruits, and a sprinkle of extra cinnamon if desired.
