Ingredients

For the Dumplings:

1 cup all-purpose flour

1/2 tsp salt

1/2 cup boiling water

1 tbsp vegetable oil

For the Curry Broth:

2 tbsp coconut oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 tbsp ginger, minced

1-2 tbsp red curry paste (adjust for spice preference)

4 cups vegetable or chicken broth

1 can (14 oz) coconut milk

1 tbsp soy sauce

1 tbsp lime juice

1 tsp brown sugar

Salt and pepper to taste

Fresh cilantro, for garnish

Optional: sliced green onions and lime wedges for serving

Instructions

Prepare the Dumplings:

In a mixing bowl, combine flour and salt. Gradually add boiling water while stirring with chopsticks or a fork until the dough starts to come together. Add vegetable oil and knead on a floured surface for about 5 minutes, until smooth. Cover with a damp cloth and let rest for 30 minutes.

      Make the Curry Broth:

In a large pot, heat coconut oil over medium heat. Add chopped onion and sauté until it's translucent (about 5 minutes). Stir in garlic and ginger, cooking for another 1-2 minutes until fragrant. Add red curry paste and cook for an additional minute.

          Add Liquids:

Pour in the vegetable or chicken broth and coconut milk. Stir well to combine. Add soy sauce, lime juice, brown sugar, salt, and pepper. Bring the mixture to a gentle simmer and cook for about 15-20 minutes to allow the flavors to meld.

              Roll and Fill Dumplings:

After the dough has rested, divide it into small equal portions (about 12). Roll each piece into a thin circle (about 3 inches in diameter). Place about 1 tsp of your desired filling (e.g., a mix of chopped vegetables and tofu or minced meat) in the center. Moisten the edges with water, fold over, and seal tightly, pinching the edges together.

                  Cook the Dumplings:

Add the dumplings to the simmering broth and cook for about 5-7 minutes, or until they float to the surface and are cooked through.

                      Serve:

Ladle the soup into bowls, garnishing each with fresh cilantro and, if desired, sliced green onions and lime wedges. Enjoy your comforting curry dumpling soup!
