3 ripe bananas, mashed

1 cup crushed pineapple, drained

1/2 cup shredded coconut (unsweetened)

1/2 cup butter, softened

1 cup granulated sugar

1/2 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 1/2 cups all-purpose flour

1/2 teaspoon cinnamon (optional)

1/2 cup chopped walnuts or macadamia nuts (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.

    In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

      Beat in the eggs one at a time, then add the mashed bananas and vanilla extract, mixing until well combined.

        Stir in the crushed pineapple and shredded coconut until evenly distributed.

          In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon (if using).

            Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.

              If desired, fold in the chopped walnuts or macadamia nuts for added crunch and flavor.

                Pour the batter into the prepared loaf pan and smooth the top with a spatula.

                  Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean.

                    Once baked, remove from the oven and allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
