500g boneless chicken thighs, cut into bite-sized pieces

2 tablespoons black pepper, freshly ground

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

3 tablespoons vegetable oil, divided

1 medium onion, sliced

3 cloves garlic, minced

1 tablespoon ginger, minced

1 red bell pepper, sliced

1 green bell pepper, sliced

2 spring onions, chopped

Salt, to taste

Optional: 1 teaspoon red chili flakes (for extra heat)

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken pieces with black pepper, soy sauce, oyster sauce, cornstarch, and a pinch of salt. Mix well, ensuring the chicken is well-coated. Let it marinate for at least 30 minutes.

    Prepare the Stir-Fry: Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken in a single layer. Cook for about 5-7 minutes until browned and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the remaining tablespoon of oil. Stir in the sliced onions, minced garlic, and ginger. Sauté for 2-3 minutes until the onions soften and become translucent.

        Add Peppers: Toss in the sliced red and green bell peppers. Stir-fry for another 3-4 minutes until the peppers are slightly tender but still crisp.

          Combine and Season: Return the cooked chicken to the skillet. Add any leftover marinade for additional flavor and stir to combine. If you like it extra spicy, sprinkle in the red chili flakes. Adjust seasoning with salt if needed.
