Ingredients
  

4 cups fresh broccoli florets

1 medium onion, diced

2 cloves garlic, minced

3 tablespoons unsalted butter

1/4 cup all-purpose flour

4 cups vegetable or chicken broth

2 cups whole milk

2 cups shredded sharp cheddar cheese

1 teaspoon Dijon mustard

Salt and pepper to taste

1/2 teaspoon paprika (optional)

Fresh chives for garnish (optional)

Instructions
 

In a large pot, melt the butter over medium heat. Add the diced onion and sauté until softened and translucent, about 5 minutes.

    Stir in the minced garlic and cook for another minute, being careful not to let it burn.

      Add the flour to the pot, stirring constantly for about 2 minutes to create a roux.

        Gradually whisk in the vegetable or chicken broth, ensuring there are no lumps. Bring the mixture to a gentle boil.

          Add the broccoli florets and simmer for 10-12 minutes, or until the broccoli is tender.

            Remove the pot from heat and use an immersion blender to puree the soup to your desired consistency (you can also blend in batches using a countertop blender).

              Return the pot to low heat and stir in the milk, cheddar cheese, and Dijon mustard. Mix until the cheese is completely melted and the soup is creamy.

                Season with salt, pepper, and paprika (if using). Adjust seasoning according to your taste.

                  Serve hot, garnished with fresh chives if desired.
