Bruschetta Chicken Pasta

2 boneless, skinless chicken breasts

2 tbsp olive oil

Salt and pepper to taste

3 cloves garlic, minced

1 cup cherry tomatoes, halved

½ cup fresh basil, chopped

1 tsp balsamic vinegar

1 tsp Italian seasoning

8 oz pasta of your choice (preferably penne or rotini)

½ cup mozzarella cheese, shredded

Freshly grated Parmesan cheese for serving

Instructions
 

Prepare the Pasta: Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside, reserving a cup of the pasta water.

    Cook the Chicken: Season the chicken breasts with olive oil, salt, and pepper. Heat a skillet over medium-high heat and cook the chicken for 5-7 minutes on each side, until cooked through and golden brown. Remove from the skillet and let it rest for a couple of minutes before slicing.

      Make the Bruschetta Topping: In the same skillet, add a little more olive oil if needed and sauté the minced garlic over medium heat for about 1 minute until fragrant. Add the halved cherry tomatoes, season with salt, pepper, and Italian seasoning. Cook for 3-4 minutes until the tomatoes begin to soften.

        Combine Pasta and Topping: Add the cooked pasta to the skillet with the tomato mixture. Pour in the balsamic vinegar and chopped basil, tossing everything together. If it seems dry, add a bit of the reserved pasta water.

          Add Cheese: Add the sliced chicken on top of the pasta mixture and sprinkle with mozzarella cheese. Cover the skillet for about 2 minutes until the cheese is melted.

            Serve: Serve the bruschetta chicken pasta warm, garnished with extra fresh basil and freshly grated Parmesan cheese.
