2 large carrots, grated

1 large apple (preferably Granny Smith or Honeycrisp), cored and diced

1/4 cup raisins or dried cranberries

1/4 cup walnuts or pecans, chopped

1/4 cup fresh parsley, finely chopped

1/4 cup plain Greek yogurt

2 tablespoons honey or maple syrup

1 tablespoon apple cider vinegar

1 teaspoon lemon juice

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the grated carrots and diced apple.

    Add the raisins (or dried cranberries), chopped walnuts (or pecans), and parsley to the bowl, mixing well to combine all the ingredients.

      In a separate small bowl, whisk together the Greek yogurt, honey (or maple syrup), apple cider vinegar, lemon juice, salt, and pepper until smooth.
