1 cup rolled oats

2 cups milk (dairy or non-dairy)

1 medium carrot, grated

1/4 cup walnuts, chopped

1/4 cup raisins or dried cranberries

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ginger powder (optional)

2 tablespoons maple syrup or honey

1 teaspoon vanilla extract

Pinch of salt

Additional walnuts and shredded coconut (for garnish, optional)

Instructions
 

In a medium saucepan, combine the rolled oats, milk, grated carrot, and a pinch of salt. Bring the mixture to a boil over medium heat.

    Once boiling, reduce the heat to low and stir in the ground cinnamon, nutmeg, and ginger powder. Simmer for about 5 to 7 minutes, stirring occasionally until the oats are creamy and cooked to your desired consistency.
