Packed with tender russet potatoes, crispy bacon, and a blend of sharp cheddar and mozzarella cheeses, this comforting dish is perfect for brunch or breakfast. 6 large russet potatoes, peeled and diced

8 strips of bacon, crisped and chopped

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

6 large eggs

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper, to taste

¼ cup chopped green onions (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C). Grease a 9x13-inch casserole dish with cooking spray or butter.

    In a large pot, bring salted water to a boil. Add the diced potatoes and cook for about 10-12 minutes, or until fork-tender. Drain and set aside.

      In a mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, paprika, salt, and pepper until well combined.

        In the prepared casserole dish, layer half of the cooked potatoes evenly across the bottom. Sprinkle half of the chopped bacon and half of both cheeses over the potatoes.

          Pour half of the egg mixture over the layered ingredients. Repeat the layers with the remaining potatoes, bacon, cheese, and then finish with the remaining egg mixture on top.

            Gently shake the casserole dish to ensure the egg mixture settles down into the layers.

              Cover the dish with aluminum foil and bake for 30 minutes. Then, remove the foil and bake an additional 15-20 minutes, or until the cheese is bubbly and golden, and the center is set.

                Remove from the oven and let it cool for a few minutes. Garnish with chopped green onions before serving.
