Ingredients

For the Cheesy Beef Burritos:

1 pound ground beef

1 small onion, diced

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

1 cup cooked rice (white or brown)

1 can black beans, drained and rinsed

1 cup shredded cheddar cheese

4 large flour tortillas

¼ cup fresh cilantro, chopped (optional)

Sour cream and salsa for serving

For the Crispy Fries:

4 large russet potatoes, cut into fries

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt to taste

Fresh parsley for garnish (optional)

Instructions

Prepare the Fries:

    - Preheat your oven to 425°F (220°C).

      - Place the cut potatoes in a large bowl and toss them with olive oil, smoked paprika, garlic powder, and salt until evenly coated.

        - Spread the fries on a baking sheet lined with parchment paper in a single layer.

          - Bake for 30-35 minutes, flipping halfway through, until golden and crispy.

            Make the Cheesy Beef Filling:

              - In a large skillet over medium-high heat, add the diced onion and sauté until translucent (about 3-4 minutes).

                - Add minced garlic and cook for another 30 seconds until fragrant.

                  - Add ground beef to the skillet. Cook until browned, breaking it apart with a spatula (about 5-7 minutes). Drain excess fat if necessary.

                    - Stir in the chili powder, cumin, paprika, salt, and pepper. Cook for 2 more minutes, allowing the spices to infuse.

                      - Mix in the cooked rice, black beans, and shredded cheddar cheese. Cook until the cheese melts and everything is well combined.

                        Assemble the Burritos:

                          - Warm the tortillas in a pan or microwave for a few seconds to make them pliable.

                            - On each tortilla, place a generous scoop of the cheesy beef mixture. Sprinkle with fresh cilantro if using, then fold in the sides and roll tightly.

                              - Optionally, you can grill each burrito seam-side down in a skillet for 2-3 minutes to crisp up the outside.

                                Serve:

                                  - Plate the crispy fries alongside the cheesy beef burritos. Serve topped with sour cream and salsa for dipping.
