12 oz cheese tortellini (fresh or frozen)

1 lb ground beef (or ground turkey)

1 can (10 oz) red enchilada sauce

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 small onion, diced

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Sour cream for serving (optional)

Instructions
 

Cook the Tortellini: Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions, approximately 3-5 minutes or until al dente. Drain and set aside.

    Prepare the Beef Mixture: In a large skillet over medium heat, add the diced onion and minced garlic. Sauté for about 2-3 minutes until the onion becomes translucent.

      Brown the Meat: Add the ground beef to the skillet with the onion and garlic. Season with chili powder, cumin, salt, and pepper. Cook until the meat is browned and fully cooked, about 5-7 minutes. Drain excess grease if necessary.

        Combine with Enchilada Sauce: Reduce the heat to low, and stir in the red enchilada sauce until well mixed. Gently fold in the cooked tortellini until everything is evenly coated.

          Add the Cheeses: Sprinkle in half of the cheddar and mozzarella cheeses, stirring to combine. Continue to cook for another 2-3 minutes until the cheese is melted and gooey.
