Ingredients

2 large chicken breasts, boneless and skinless

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

4 garlic cloves, minced

1 tsp garlic powder

1 tsp onion powder

1 tsp Italian seasoning

Salt and pepper to taste

4 large tortillas (flour or whole wheat)

1 cup fresh spinach leaves

½ cup cherry tomatoes, halved

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Optional: hot sauce or ranch dressing for serving

Instructions

Prepare the Chicken: In a bowl, combine the minced garlic, garlic powder, onion powder, Italian seasoning, salt, and pepper. Rub this mixture all over the chicken breasts.

Cook the Chicken: Heat olive oil in a skillet over medium-high heat. Once hot, add the chicken breasts and cook for 5-7 minutes on each side, or until fully cooked and golden brown. The internal temperature should reach 165°F (75°C). Remove the chicken and let it rest for a few minutes before slicing.

Assemble the Wraps: Lay the tortillas flat on a clean surface. Place a generous handful of fresh spinach leaves in the center of each tortilla, followed by sliced chicken, shredded mozzarella, and cheddar cheese, and top with halved cherry tomatoes.

Roll the Wraps: Fold in the sides of the tortilla and then roll from the bottom up, enclosing all the delicious fillings. Secure with toothpicks if necessary.

Toast the Wraps: In the same skillet (lower the heat to medium), place the wraps seam-side down. Toast for about 2-3 minutes on each side until golden brown and the cheese is melted.

Serve: Slice the wraps in half and garnish with fresh parsley. Serve with a side of hot sauce or ranch dressing for dipping.
