Cheesy Masala Beans on Toast

Ingredients
  

1 can (400g) of mixed beans (kidney beans, chickpeas, black beans)

1 tablespoon olive oil

1 medium onion, finely chopped

2 garlic cloves, minced

1 teaspoon ginger paste

1-2 green chilies, finely chopped (adjust to taste)

1 teaspoon cumin seeds

1 teaspoon garam masala

½ teaspoon turmeric powder

Salt to taste

Freshly cracked black pepper to taste

100g grated cheese (cheddar or mozzarella)

4 slices of whole-grain bread

Fresh cilantro, chopped (for garnish)

Instructions
 

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the cumin seeds and let them sizzle for about 30 seconds until fragrant. Add the chopped onion and sauté until golden brown, about 5-7 minutes.

    Add Garlic and Spices: Stir in the minced garlic, ginger paste, and chopped green chilies. Cook for another 1-2 minutes until the raw smell disappears.

      Mash the Beans: Drain and rinse the mixed beans. Add them to the skillet and mash them lightly with a fork, ensuring they're partly broken but still have some texture.

        Season the Mixture: Add the garam masala, turmeric powder, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, allowing the flavors to meld together. If the mixture is too dry, add a splash of water.

          Cheesy Goodness: Once the bean mixture is heated through, sprinkle the grated cheese on top, cover the skillet, and allow it to melt for about 2-3 minutes.

            Toast the Bread: While the cheese is melting, toast the bread slices to your preferred crispiness.

              Assemble: Spoon the cheesy masala bean mixture generously onto each slice of toasted bread.
