2 boneless, skinless chicken breasts

2 medium sweet potatoes, peeled and diced

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon cayenne pepper (optional, for heat)

1 cup broccoli florets

1/2 cup cooked quinoa

1 avocado, sliced

Fresh cilantro, for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Sweet Potatoes: In a bowl, toss the diced sweet potatoes with 1/2 tablespoon of olive oil, smoked paprika, garlic powder, cayenne pepper, salt, and pepper until evenly coated. Spread them out on a baking sheet in a single layer.

      Bake Sweet Potatoes: Roast the sweet potatoes in the preheated oven for 25-30 minutes, or until they are tender and slightly caramelized, flipping halfway through for even cooking.

        Cook Chicken: While the sweet potatoes are roasting, heat the remaining 1/2 tablespoon of olive oil in a skillet over medium-high heat. Season the chicken breasts with salt and pepper. When the skillet is hot, add the chicken and cook for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (74°C). Remove from the skillet and let it rest for a few minutes before slicing.

          Steam Broccoli: In the last 5 minutes of the sweet potatoes' baking time, place the broccoli florets in a steamer basket over boiling water, cover, and steam for about 5 minutes or until vibrant and tender-crisp.

            Assemble Bowls: In two bowls, layer the cooked quinoa, roasted sweet potatoes, sliced chicken, and steamed broccoli. Top each bowl with sliced avocado and a sprinkle of fresh cilantro.
