1 pound chicken sausage (your choice of flavor)

1 red bell pepper, cut into 1-inch pieces

1 yellow bell pepper, cut into 1-inch pieces

1 medium zucchini, sliced into rounds

1 medium red onion, cut into wedges

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Skewers (if using wooden skewers, soak them in water for 30 minutes)

Instructions
 

Preheat your grill or grill pan to medium-high heat.

    In a large mixing bowl, combine the olive oil, minced garlic, dried oregano, smoked paprika, salt, and pepper.

      Add the chicken sausage, bell peppers, zucchini, and red onion to the bowl. Toss everything until well coated with the marinade.
