8 ounces elbow macaroni

1 pound ground beef or turkey

1 can (15 ounces) kidney beans, drained and rinsed

1 can (14.5 ounces) diced tomatoes (with green chilies optional)

1 can (15 ounces) tomato sauce

1 small onion, diced

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

1/2 cup sour cream (optional, for serving)

Fresh cilantro or green onions (for garnish)

Cook the Pasta: In a large pot, bring water to a boil and cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.

    Brown the Meat: In a large skillet over medium heat, add the ground beef (or turkey). Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.

      Add Aromatics: Add the diced onion and minced garlic to the skillet, sautéing until the onion becomes translucent, about 3-4 minutes.

        Spice it Up: Stir in chili powder, cumin, paprika, salt, and pepper. Cook for an additional minute to enhance the flavors.
