Cinnamon Sugar French Toast Muffins

6 slices of day-old bread (white, brioche, or challah works best)

3 large eggs

1 cup milk

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/4 cup unsalted butter, melted

1/4 cup brown sugar

1 teaspoon ground cinnamon (for the topping)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a standard 12-cup muffin pan with cooking spray or butter.

    Cut the bread slices into small cubes, about 1 inch in size. Place them in a large bowl and set aside.

      In a separate bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, 1 teaspoon of cinnamon, and salt until well combined.

        Pour the egg mixture over the cubed bread and gently fold until all the bread pieces are coated. Let the mixture sit for about 10 minutes to soak up the liquid.

          Meanwhile, combine the melted butter, brown sugar, and 1 teaspoon of cinnamon in a small bowl to make the topping.

            Scoop the French toast mixture into the prepared muffin cups, filling each about 3/4 full.

              Drizzle the cinnamon-sugar topping over each muffin, ensuring some gets down into the mixture.

                Bake in the preheated oven for 18-22 minutes, or until the muffins are golden brown and a toothpick inserted in the center comes out clean.

                  Allow them to cool in the pan for 5 minutes before transferring them to a wire rack. Serve warm, optionally dusted with powdered sugar or accompanied by maple syrup.
