Creamy Cajun Chicken Pasta

8 oz fettuccine or linguine pasta

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons Cajun seasoning

2 tablespoons olive oil

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 cup diced tomatoes (canned or fresh)

½ cup diced onions

½ cup diced bell peppers (red or green)

2 cloves garlic, minced

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta:

    In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.

      Prepare the Chicken:

        In a large skillet, heat olive oil over medium-high heat. Season the chicken pieces with Cajun seasoning, salt, and pepper. Add the chicken to the skillet and cook until lightly browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

          Sauté the Vegetables:

            In the same skillet, add onions, bell peppers, and minced garlic. Sauté for 3-4 minutes until the vegetables are softened and fragrant.

              Make the Sauce:

                Pour in the chicken broth and bring to a simmer. Stir in the heavy cream and bring to a gentle boil. Reduce the heat and add in the grated Parmesan cheese, stirring until melted and creamy.

                  Combine Everything:
