1 lb chicken sausage, sliced

1 cup orzo pasta

1 medium onion, diced

3 cloves garlic, minced

2 cups chicken broth

1 cup heavy cream

1 cup spinach, chopped

1 teaspoon Italian seasoning

1 teaspoon smoked paprika

1/2 cup grated Parmesan cheese

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the sausage: In a large skillet over medium heat, add olive oil. Once hot, add the sliced chicken sausage and cook until browned, about 5 minutes. Remove the sausage and set aside.

    Cook the aromatics: In the same skillet, add the diced onion. Sauté for about 3-4 minutes until translucent. Add minced garlic and cook for an additional minute until fragrant.

      Add the orzo: Stir in the orzo pasta and toast it for about 1-2 minutes in the skillet with the onion and garlic. This adds a lovely nutty flavor.

        Pour in the broth: Slowly add the chicken broth, bringing the mixture to a boil. Season with Italian seasoning, smoked paprika, salt, and pepper. Reduce the heat to a simmer, cover, and let it cook for about 10-12 minutes or until the orzo is al dente and most of the liquid is absorbed.

          Stir in the cream: Once the orzo is cooked, lower the heat and add the heavy cream and the cooked chicken sausage back to the pan. Stir until well combined.

            Add spinach and cheese: Fold in the chopped spinach and grated Parmesan cheese. Cook for an additional 2-3 minutes until the spinach is wilted and everything is heated through.
