Ingredients

8 oz fettuccine or linguine pasta

1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

2 tablespoons butter

1 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

Fresh parsley, chopped for garnish

Zest of 1 lemon

Juice of 1/2 lemon

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine or linguine according to package instructions until al dente. Reserve 1 cup of pasta water and then drain the rest. Set aside.

Sauté the Shrimp: In a large skillet over medium heat, add 2 tablespoons of olive oil and 2 tablespoons of butter. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant. Add the shrimp, seasoning them with salt, black pepper, and red pepper flakes (if using). Cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

Make the Sauce: In the same skillet, add the chicken broth and bring to a simmer. Reduce the heat to low, then stir in the heavy cream, Parmesan cheese, lemon zest, and lemon juice. Mix well and let it simmer for about 3-4 minutes until the sauce thickens slightly.

Combine Pasta and Shrimp: Add the cooked pasta to the sauce, tossing to coat evenly. If the sauce is too thick, gradually add some reserved pasta water until you reach the desired consistency. Return the cooked shrimp to the skillet and toss to combine everything well.

Serve: Plate the creamy garlic shrimp pasta, garnishing with chopped fresh parsley and an extra sprinkle of Parmesan cheese if desired. Serve immediately and enjoy!
