Creamy Mushroom and Asparagus Chicken Penne

8 oz penne pasta

2 cups fresh asparagus, trimmed and cut into 2-inch pieces

1 lb boneless, skinless chicken breast, cut into bite-sized pieces

1 cup cremini mushrooms, sliced

2 cloves garlic, minced

1 small onion, diced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

2 tbsp olive oil

1 tsp dried thyme

1/2 tsp red pepper flakes (optional)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Cook the Penne: In a large pot of boiling salted water, cook the penne according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the chicken pieces, seasoning with salt and pepper. Cook until golden brown and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and cook until translucent, about 2-3 minutes. Stir in the minced garlic, sliced mushrooms, and asparagus. Cook until the mushrooms are tender and the asparagus is bright green, about 4-5 minutes.

        Make the Sauce: Pour in the chicken broth and bring to a simmer. Add the heavy cream, dried thyme, and red pepper flakes (if using). Stir well to combine. Let simmer for 3-4 minutes until slightly thickened.
