Creamy Tuscan Ravioli Soup

1 tablespoon olive oil

1 small onion, diced

3 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

1 teaspoon dried Italian herbs (oregano, basil, thyme)

6 cups vegetable or chicken broth

1 pound fresh or frozen cheese ravioli

1 can (14.5 oz) diced tomatoes, drained

1 cup fresh spinach, chopped

1 cup heavy cream

Salt and pepper to taste

Grated Parmesan cheese for garnish

Fresh basil leaves for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 4-5 minutes.

    Stir in the minced garlic, diced carrots, and celery. Cook for another 5 minutes until the vegetables begin to soften.

      Sprinkle in the dried Italian herbs and stir well to combine, allowing the flavors to meld for about a minute.

        Pour in the vegetable or chicken broth and bring the mixture to a simmer. Allow it to cook for about 10 minutes to let the flavors develop.

          Add the ravioli and diced tomatoes to the pot. Cook according to package instructions or until the ravioli are tender, about 4-6 minutes.

            Reduce the heat to low and stir in the chopped spinach and heavy cream. Season with salt and pepper to taste, and let it warm through for a few more minutes.

              Once heated, serve the soup in bowls, garnishing with grated Parmesan cheese and fresh basil leaves.
