Crispy Bang Bang Chicken

Ingredients
  

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup all-purpose flour

1 cup cornstarch

2 large eggs, beaten

2 cups panko bread crumbs

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

Salt and pepper to taste

Vegetable oil, for frying

½ cup mayonnaise

¼ cup sweet chili sauce

1 tbsp sriracha (adjust to taste)

1 tbsp lime juice

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

In a large bowl, mix the flour, garlic powder, onion powder, paprika, salt, and pepper. Set aside.

    In another bowl, whisk the eggs until well combined.

      In a third bowl, place the panko bread crumbs.

        Dip each piece of chicken first in the flour mixture, then in the beaten eggs, and finally in the panko breadcrumbs, making sure each piece is well coated.

          Heat vegetable oil in a large skillet over medium-high heat until shimmering.

            Fry the chicken pieces in batches, being careful not to overcrowd the pan. Cook for 4-5 minutes per side or until golden brown and cooked through, then transfer to a paper towel-lined plate to drain excess oil.

              In a separate bowl, combine mayonnaise, sweet chili sauce, sriracha, and lime juice. Stir until smooth and well blended.

                Once the chicken is crispy, toss it in a large bowl with the Bang Bang sauce until well coated.

                  Serve hot, garnished with chopped green onions and sesame seeds.
