Ingredients

1 lb fresh salmon fillet, skin removed and cut into bite-sized cubes

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

Salt and pepper to taste

Vegetable oil for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

3 tbsp sweet chili sauce

1 tbsp sriracha (adjust based on spice preference)

1 tsp lime juice

Green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions

Prepare the Salmon: In a bowl, season the salmon cubes with salt, pepper, garlic powder, onion powder, and paprika. Toss gently to coat.

    Set Up Dredging Stations:

      - In one bowl, place the all-purpose flour.

        - In the second bowl, pour the beaten eggs.

          - In the third bowl, add the panko breadcrumbs.

            Coat the Salmon:

              - Dredge each salmon cube in the flour, shaking off the excess.

                - Dip it into the beaten eggs, allowing any extra egg to drip off.

                  - Finally, coat the cube in panko breadcrumbs, pressing gently to adhere. Repeat for all cubes.

                    Fry the Salmon Bites:

                      - Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat.

                        - Once hot, carefully add the salmon bites in batches, frying for about 2-3 minutes on each side or until golden brown and crispy. Do not overcrowd the pan.

                          - Once cooked, transfer the salmon bites to a plate lined with paper towels to absorb excess oil.

Make the Bang Bang Sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth. Taste and adjust the spiciness if desired.

Serve: Arrange the crispy salmon bites on a serving platter, drizzle with the Bang Bang sauce, and garnish with chopped green onions and sesame seeds.

Enjoy: Serve these delicious bites warm, alongside additional sauce for dipping!
