1 lb (450g) boneless chicken thighs, sliced into bite-sized pieces

1/2 cup all-purpose flour

1/4 cup cornstarch

1 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 cup water

Oil for frying

For the sauce:

1/4 cup honey

1/4 cup soy sauce

4 cloves garlic, minced

1 tablespoon rice vinegar

1 tablespoon sesame oil

1/2 teaspoon red pepper flakes (optional)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Prepare the Chicken: In a medium bowl, combine the flour, cornstarch, baking powder, salt, pepper, and garlic powder. Gradually add water and mix until a smooth batter forms. Toss the chicken pieces in the batter until fully coated.

    Heat the Oil: In a large skillet or wok, heat about 1 inch of oil over medium-high heat until it's shimmering. You can test the temperature by dropping a small amount of batter into the oil; it should sizzle immediately.

      Fry the Chicken: Carefully add the battered chicken pieces to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 4-5 minutes, or until golden brown and crispy. Remove the chicken and drain on paper towels.
