Ingredients

4 medium cucumbers, thinly sliced

1 cup plain Greek yogurt

2 tablespoons fresh dill, chopped

1 tablespoon fresh lemon juice

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for a kick)

1 small red onion, thinly sliced (optional)

Cherry tomatoes, halved (for garnish)

Instructions

In a large mixing bowl, combine the Greek yogurt, chopped dill, lemon juice, olive oil, garlic powder, salt, black pepper, and red pepper flakes (if using). Mix well until smooth and creamy.

Add the thinly sliced cucumbers to the yogurt mixture. If you are using red onion, add it at this stage as well. Gently toss to coat the cucumbers evenly with the dressing.

Let the salad sit in the refrigerator for at least 30 minutes to allow the flavors to meld together.

Just before serving, give the salad a gentle stir. Garnish with halved cherry tomatoes for a pop of color.

Serve chilled as a refreshing side dish or a light lunch!
