1 whole chicken, cut into pieces (about 3-4 lbs)

1 cup coconut milk

2 tablespoons vegetable oil

1 large onion, finely chopped

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tomatoes, chopped

2-3 green chilies, slit (adjust for heat preference)

1 teaspoon ground turmeric

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon paprika

Salt, to taste

Fresh cilantro, for garnish

Juice of 1 lime

Optional: Banana leaves for wrapping (for grilling)

Marinate the Chicken: In a large bowl, combine the chicken pieces with salt, turmeric, cumin, coriander, paprika, and lime juice. Mix well and allow to marinate for at least 30 minutes (or preferably overnight in the fridge).

    Prepare the Sauce: In a large pot or deep skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until golden brown (around 5-7 minutes).

      Add Aromatics: Stir in the minced garlic and grated ginger, sautéing for another 1-2 minutes until fragrant. Then add the chopped tomatoes and green chilies, cooking until the tomatoes soften and break down (around 5 minutes).

        Cook the Chicken: Add the marinated chicken pieces to the pot, stirring to coat them in the sauce. Cook for about 10 minutes, allowing the chicken to brown slightly.

          Simmer with Coconut Milk: Pour in the coconut milk and stir to combine. Bring the mixture to a gentle simmer. Cover the pot and cook for about 30-40 minutes, or until the chicken is cooked through and tender.

            Adjust Seasoning: Taste and adjust salt if necessary. If the sauce is too thick, you can add a splash of water to achieve your desired consistency.

              Grill (Optional): For a smoky flavor, you can wrap the chicken in banana leaves and grill for about 15-20 minutes, turning once. Alternatively, you can broil in the oven for a few minutes to get a nice char.
