2 large cucumbers, thinly sliced

1/4 cup rice vinegar

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 tablespoon sugar (or honey/agave for natural sweetening)

1 teaspoon fresh ginger, grated

1-2 cloves garlic, minced

1 tablespoon sesame seeds, toasted

2 green onions, thinly sliced

Pinch of red pepper flakes (optional for heat)

Fresh cilantro leaves for garnish (optional)

Instructions
 

Prepare the Cucumbers: Wash the cucumbers and slice them thinly. For added texture, you can choose to spiralize them or use a vegetable peeler to create ribbons. Place the cucumber slices in a large mixing bowl.
