2 cups cooked chicken, shredded or diced

1 cup shredded cheese (cheddar, mozzarella, or your favorite blend)

1 cup fresh spinach, chopped

1/2 cup bell peppers, diced (any color)

1/4 cup sour cream or Greek yogurt

1 tablespoon ranch dressing (optional)

4 large flour tortillas

Salt and pepper to taste

Olive oil spray or butter for frying

Instructions
 

In a large mixing bowl, combine the shredded chicken, cheese, chopped spinach, and diced bell peppers. Mix well until all ingredients are evenly distributed.

    Add the sour cream (and ranch dressing if using) to the chicken mixture. Season with salt and pepper to taste. Stir until everything is well combined.

      Lay out a tortilla on a clean surface. Spoon a generous portion of the chicken mixture onto the center of the tortilla.

        Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top to form a wrap. Repeat with the remaining tortillas and filling.

          Heat a large skillet over medium heat and lightly spray with olive oil or melt a small amount of butter.

            Place the wraps seam-side down in the skillet. Cook for about 3-4 minutes on each side, or until the tortillas are golden brown and crispy, and the cheese has melted inside.

              Remove from the skillet and let cool for a minute. Cut the wraps in half diagonally and serve warm.
