Ingredients

8 oz linguine pasta

2 tbsp unsalted butter

2 boneless, skinless chicken breasts, sliced into strips

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

1/2 tsp cayenne pepper (adjust to taste)

Salt and black pepper, to taste

1 cup heavy cream

1/2 cup chicken broth

1/2 cup grated Parmesan cheese

1 cup fresh cherry tomatoes, halved

2 cups baby spinach

Fresh parsley, chopped (for garnish)

Optional: Red pepper flakes (for extra heat)

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Drain and set aside, saving 1/2 cup of pasta water.

Prepare the Chicken: Season the chicken strips with garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper.

Cook the Chicken: In a large skillet over medium-high heat, melt 2 tablespoons of butter. Add the seasoned chicken and cook for 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Make the Sauce: In the same skillet, add the heavy cream and chicken broth, stirring to combine. Bring to a simmer and let it cook for 3-4 minutes until slightly thickened.

Combine Ingredients: Stir in the grated Parmesan cheese, cherry tomatoes, and baby spinach. Allow the spinach to wilt and the tomatoes to soften (about 2-3 minutes).

Add Pasta and Chicken: Return the cooked chicken to the skillet, then add the linguine. If the sauce is too thick, add a little reserved pasta water until you reach your desired consistency. Toss everything together until well coated.

Garnish and Serve: Remove from heat, garnish with fresh parsley, and sprinkle with red pepper flakes if using. Serve immediately and enjoy your delicious cowboy butter chicken linguine!
