Ingredients

2 large cucumbers, sliced into thin rounds

1 cup cherry tomatoes, halved

8 ounces fresh mozzarella balls (bocconcini), halved

1/4 cup fresh basil leaves, torn

3 tablespoons extra virgin olive oil

1 tablespoon balsamic vinegar

Salt and freshly cracked black pepper, to taste

Instructions

Prepare the Cucumbers: Wash the cucumbers thoroughly and slice them into thin rounds. You can peel them if you prefer, but leaving the skin on adds extra crunch and nutrition.

Mix the Salad: In a large mixing bowl, combine the cucumber slices, halved cherry tomatoes, and halved mozzarella balls.

Add Fresh Herbs: Gently fold in the torn basil leaves, ensuring they are evenly distributed throughout the salad.

Dress the Salad: In a small bowl, whisk together the extra virgin olive oil and balsamic vinegar. Season with salt and freshly cracked black pepper to taste.

Combine: Drizzle the dressing over the cucumber mixture and toss gently to combine, making sure everything is well coated.

Serve: Allow the salad to sit for about 10 minutes at room temperature to let the flavors meld. Serve chilled or at room temperature as a refreshing side dish.
