For the Chicken Skewers:

1 pound (450g) boneless, skinless chicken thighs, cut into 1-inch pieces

3 tablespoons soy sauce

2 tablespoons fish sauce

2 tablespoons lime juice (freshly squeezed)

2 tablespoons brown sugar

2 cloves garlic, minced

1 teaspoon ground coriander

½ teaspoon black pepper

1 teaspoon red pepper flakes (adjust for spice preference)

Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes)

For the Peanut Sauce:

½ cup creamy peanut butter

¼ cup coconut milk

2 tablespoons soy sauce

1 tablespoon brown sugar

1 tablespoon lime juice (freshly squeezed)

1 clove garlic, minced

1 teaspoon grated fresh ginger

1-2 tablespoons water (to thin the sauce, as needed)

Crushed peanuts and chopped cilantro for garnish

Marinate the Chicken: In a large bowl, whisk together the soy sauce, fish sauce, lime juice, brown sugar, minced garlic, coriander, black pepper, and red pepper flakes until the sugar is dissolved. Add the chicken pieces to the marinade, toss to coat, and let sit for at least 30 minutes (or up to 4 hours in the refrigerator for deeper flavor).

    Prepare the Peanut Sauce: In a separate bowl, combine the peanut butter, coconut milk, soy sauce, brown sugar, lime juice, minced garlic, and grated ginger. Mix until smooth. If the sauce is too thick, add water one tablespoon at a time until it reaches your desired consistency.

      Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan on the stove, heat it over medium-high heat and grease lightly.

        Assemble the Skewers: Thread marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.
