8 oz whole grain pasta (spaghetti or penne)

2 cups fresh broccoli florets

2 tablespoons olive oil

3 cloves garlic, minced

1/2 teaspoon red pepper flakes

1 lemon (zested and juiced)

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Cook the Pasta: Bring a large pot of salted water to a boil. Add the whole grain pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Blanch the Broccoli: In the same pot, add the broccoli florets to the boiling water. Blanch for about 2-3 minutes until bright green and tender-crisp. Drain and immediately transfer the broccoli to an ice bath to stop the cooking process. Once cooled, drain again and set aside.

      Prepare the Garlic Oil: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes; sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

        Combine Ingredients: Add the cooked pasta and blanched broccoli to the skillet. Toss well to combine. Pour in the lemon juice and half of the reserved pasta water. Stir to create a light sauce, adding more pasta water if necessary to reach your desired consistency.

          Finish with Flavor: Stir in the lemon zest, grated Parmesan cheese (or nutritional yeast), and season with salt and pepper to taste. Mix until everything is evenly coated.
