Ingredients
  

2 boneless, skinless chicken breasts

1 tablespoon olive oil

2 teaspoons dried oregano

1 teaspoon garlic powder

1 teaspoon lemon zest

Salt and pepper, to taste

1 cup cooked quinoa (or brown rice)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, thinly sliced

1/2 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

Fresh parsley, chopped for garnish

1/4 cup tzatziki sauce (store-bought or homemade)

Instructions
 

Marinate the Chicken: In a small bowl, combine olive oil, oregano, garlic powder, lemon zest, salt, and pepper. Rub this mixture all over the chicken breasts. Allow to marinate for at least 30 minutes (or up to overnight in the refrigerator).

    Cook the Chicken: Preheat a grill or grill pan over medium heat. Cook the marinated chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the juices run clear. Remove from heat and let rest for a few minutes before slicing.

      Prepare the Bowl Base: While the chicken is cooking, prepare quinoa, or use pre-cooked brown rice according to package instructions.

        Assemble the Bowls: In each bowl, add a base of quinoa or rice. Top with sliced chicken, cherry tomatoes, cucumber, red onion, Kalamata olives, and crumbled feta cheese.

          Drizzle and Garnish: Spoon tzatziki sauce over the bowls and garnish with fresh parsley.
