Ingredients

2 medium potatoes, diced (russet or Yukon gold)

1 tablespoon olive oil

1 small onion, diced

1 bell pepper (any color), diced

2 cloves garlic, minced

1 cup cooked sausage, crumbled (or use plant-based sausage)

1 cup fresh spinach, chopped

4 large eggs

Salt and pepper to taste

Fresh herbs (chives or parsley), for garnish

Sriracha or hot sauce (optional)

Instructions

Cook the Potatoes: In a large skillet over medium heat, add the olive oil. Once hot, add the diced potatoes. Season with salt and pepper. Cook for about 10-12 minutes, stirring occasionally, until they are golden and crispy on the outside.

Sauté Veggies: Add the diced onion and bell pepper to the skillet with the potatoes. Sauté for an additional 5-7 minutes, until softened. Stir in the minced garlic and cook for 1 minute, or until fragrant.

Add Protein: Incorporate the crumbled sausage (or plant-based sausage) into the skillet. Cook for another 3-5 minutes until everything is heated through.

Incorporate Greens: Stir in the chopped spinach and mix until wilted, roughly 2 minutes.

Cook the Eggs: In a separate small pan, cook the eggs to your desired style (fried, poached, or scrambled). If you prefer, you can also create wells in the hash and crack the eggs directly into the skillet, covering it with a lid until the eggs are cooked to your liking.

Serve: Once everything is cooked, divide the loaded hash into bowls or plates. Top each serving with a cooked egg and garnish with fresh herbs. Drizzle with sriracha or hot sauce if desired.
