Ingredients
  

12 ounces penne pasta

2 cups cherry tomatoes, halved

3 cups vegetable broth

1 cup heavy cream

1 medium onion, diced

4 cloves garlic, minced

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

1 cup grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions
 

In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

    Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Add the halved cherry tomatoes, dried basil, dried oregano, salt, and pepper. Cook for 5-7 minutes, allowing the tomatoes to soften and release their juices.

        Pour in the vegetable broth and bring the mixture to a boil.

          Add the penne pasta and stir to combine. Reduce heat to a simmer, cover, and cook for about 10-12 minutes, or until the pasta is cooked al dente, stirring occasionally.

            Once the pasta is cooked, reduce the heat to low and stir in the heavy cream and grated Parmesan cheese. Mix well until the sauce is creamy and smooth.

              Taste and adjust seasoning as needed with additional salt and pepper.

                Serve hot, garnished with fresh basil leaves and extra Parmesan cheese if desired.
