Ingredients

20 jumbo pasta shells

1 cup ricotta cheese

1 cup shredded mozzarella cheese (divided)

1/2 cup grated Parmesan cheese

2 cups fresh spinach, chopped

1 clove garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon Italian seasoning

2 cups marinara sauce

Fresh basil leaves for garnish (optional)

Instructions

Preheat Oven: Preheat your oven to 375°F (190°C).

Cook Pasta: Bring a large pot of salted water to a boil. Add the jumbo shells and cook until al dente, usually about 9-11 minutes. Drain and rinse under cold water to stop the cooking process. Set aside.

Prepare Filling: In a bowl, combine ricotta cheese, 1/2 cup mozzarella cheese, Parmesan cheese, chopped spinach, minced garlic, salt, pepper, and Italian seasoning. Mix well until creamy and all ingredients are incorporated.

Stuff Shells: Using a teaspoon or piping bag, carefully fill each pasta shell with the ricotta and spinach filling, placing them seam side up in a 9x13 inch baking dish.

Add Sauce: Pour half of the marinara sauce evenly over the stuffed shells, then sprinkle the remaining mozzarella cheese on top. Pour the rest of the marinara sauce over the cheese.

Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Serve: Once baked, let the dish cool for a few minutes. Garnish with fresh basil leaves if desired and serve warm. Enjoy your delicious and healthy veggie dinner!
