Easy Spinach and Ricotta Stuffed Shells – A Healthy Veggie Dinner

12 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1 jar (about 24 oz) marinara sauce

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta Shells: Bring a large pot of salted water to a boil. Add the jumbo pasta shells and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

      Prepare the Filling: In a large mixing bowl, combine the chopped spinach, ricotta cheese, 1/2 cup mozzarella cheese, 1/4 cup Parmesan cheese, minced garlic, egg, salt, and pepper. Mix until well combined.

        Stuff the Shells: Take each cooked shell and carefully spoon the spinach and ricotta filling into it, filling each shell generously.

          Prepare the Baking Dish: Spread about 1 cup of marinara sauce evenly on the bottom of a 9x13-inch baking dish. Arrange the stuffed shells in a single layer over the sauce.

            Add More Sauce: Pour the remaining marinara sauce over the stuffed shells, ensuring they are well covered.

              Top with Cheese: Sprinkle the remaining mozzarella and Parmesan cheese on top of the shells.

                Bake: Cover the baking dish with aluminum foil (to prevent the cheese from burning) and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                  Garnish & Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves before serving.
