Ingredients

2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 cup sun-dried tomatoes, chopped

1 teaspoon Italian seasoning

1 cup heavy cream

1 cup chicken broth

8 ounces penne pasta

1 cup fresh spinach, chopped

1 cup grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

Prepare the Chicken: While the pasta is cooking, season the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and sauté for about 6-7 minutes on each side until browned and cooked through. Remove the chicken from the skillet and let it rest.

Sauté Garlic and Tomatoes: In the same skillet, lower the heat to medium, then add the minced garlic and sun-dried tomatoes. Cook for 2-3 minutes until fragrant.

Make the Sauce: Pour in the heavy cream and chicken broth, then add Italian seasoning. Stir to combine and bring the mixture to a gentle simmer.

Incorporate Spinach and Cheese: Add the chopped spinach and grated Parmesan cheese into the sauce, stirring until the cheese melts and the spinach wilts (about 2 minutes).

Combine Chicken and Pasta: Slice the cooked chicken breasts into strips and add them back into the skillet. Then, add the drained pasta and toss everything together until well combined and heated through.

Serve: Plate the Tuscan chicken pasta hot, garnish with fresh basil leaves, and add more Parmesan cheese if desired.
