Ingredients

4 ripe but firm bananas

1/2 cup all-purpose flour

1/4 teaspoon salt

1/2 teaspoon baking powder

1/2 cup milk (or plant-based milk)

1 teaspoon vanilla extract

1/4 cup granulated sugar

1 teaspoon cinnamon (plus extra for serving)

Vegetable oil (for frying)

4 tablespoons unsalted butter

1 tablespoon brown sugar

Instructions

Prepare the Bananas: Peel the bananas and cut them in half lengthwise, then into bite-sized pieces or rounds, depending on your preference.

Make the Batter: In a mixing bowl, whisk together the flour, salt, baking powder, milk, granulated sugar, vanilla extract, and 1 teaspoon of cinnamon until smooth.

Heat the Oil: In a large skillet, pour enough vegetable oil to cover the bottom of the pan (about 1/4 inch deep) and heat it over medium heat until shimmering.

Fry the Bananas: Dip each banana piece into the batter, allowing the excess to drip off. Carefully place them in the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes on each side, or until golden brown and crispy. Once done, use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

Make the Cinnamon Butter Sauce: In a small saucepan, melt the butter over medium heat. Once melted, stir in the brown sugar and let it simmer until it begins to bubble. Add the remaining 1 teaspoon of cinnamon and stir until well combined. Remove from heat.

Serve: Arrange the fried bananas on a serving plate and drizzle the warm cinnamon butter sauce generously over the top. Optionally, sprinkle with extra cinnamon and serve immediately.
