1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried oregano

½ teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

Juice of 1 lemon

Fresh parsley, chopped, for garnish

Marinate the Chicken: In a bowl, combine chicken pieces with salt, pepper, smoked paprika, oregano, red pepper flakes, and lemon juice. Mix well to coat the chicken evenly. Let it marinate for at least 20 minutes (or up to 2 hours in the refrigerator).

    Cook the Chicken: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the marinated chicken pieces in a single layer, cooking until golden brown, about 5-6 minutes per side. Ensure chicken is cooked through (165°F or 75°C internal temperature). Remove chicken from the skillet and set aside.

      Prepare the Garlic Butter Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic. Sauté for about 1-2 minutes until fragrant but not burned.

        Combine: Return the cooked chicken bites to the skillet. Toss them in the garlic butter sauce to coat thoroughly. Cook together for another 2-3 minutes, allowing the flavors to blend.
