1 lb sirloin steak, cut into 1-inch cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon dried rosemary

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prep the Potatoes: In a large skillet, add the halved baby potatoes. Cover them with water and a pinch of salt. Bring to a boil and simmer for about 10-12 minutes until they are fork-tender, then drain and set aside.
