Garlic Butter Steak Bites and Potatoes

1 lb sirloin steak, cut into bite-sized cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, finely chopped (or ½ teaspoon dried)

1 teaspoon fresh thyme, finely chopped (or ½ teaspoon dried)

Salt and pepper to taste

2 tablespoons olive oil

Chopped parsley for garnish (optional)

Lemon wedges for serving (optional)

Prep the Potatoes: Start by preheating your oven to 400°F (200°C). In a large bowl, toss the halved baby potatoes with olive oil, salt, and pepper until evenly coated.

    Roast the Potatoes: Spread the potatoes in a single layer on a baking sheet and roast for about 20-25 minutes, or until they are golden brown and tender, flipping halfway through.

      Sear the Steak Bites: While the potatoes are roasting, season the steak cubes generously with salt and pepper. In a large skillet, melt 2 tablespoons of butter over medium-high heat. Once hot, add the steak bites in a single layer (you may need to do this in batches). Sear for about 2-3 minutes per side, or until browned but still medium-rare (cook longer for desired doneness). Remove the steak from the skillet and set aside.

        Make Garlic Butter: In the same skillet, reduce the heat to medium. Add the remaining 2 tablespoons of butter and minced garlic, and sauté for about 30 seconds until fragrant. Stir in the fresh herbs (rosemary and thyme) and season with additional salt and pepper to taste.

          Combine: Return the steak bites to the skillet and toss to coat them in the garlic butter. Cook for an additional minute until the steak is warmed through.

            Serve: Once the potatoes are done roasting, remove them from the oven. Plate the potatoes and top with garlic butter steak bites. Drizzle any remaining garlic butter from the skillet on top for extra flavor. Garnish with chopped parsley and serve with lemon wedges for a fresh twist.
