Garlic Butter Steak Bites and Potatoes

1 lb (450g) sirloin steak, cut into 1-inch cubes

1 lb (450g) baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon rosemary, chopped (or 1/2 teaspoon dried rosemary)

1 teaspoon thyme, chopped (or 1/2 teaspoon dried thyme)

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare Potatoes: Preheat your oven to 400°F (200°C). Place the halved baby potatoes on a baking sheet. Drizzle with olive oil, then season with salt and pepper. Toss to coat evenly.

    Roast Potatoes: Roast the potatoes in the preheated oven for about 20-25 minutes or until golden brown and tender, flipping halfway through for even cooking.

      Sear Steak Bites: While the potatoes are roasting, heat a large skillet over medium-high heat. Add 2 tablespoons of butter and allow it to melt.

        Season Steak: Season the sirloin steak cubes liberally with salt and pepper. Once the butter is bubbling, add the steak bites to the skillet in a single layer. Be careful not to overcrowd the pan.

          Cook Steak: Sear for 2-3 minutes on each side for medium-rare, or until desired doneness is reached. Remove the steak from the skillet and set aside on a plate.

            Garlic Butter Sauce: In the same skillet, reduce the heat to medium. Add the remaining 2 tablespoons of butter, minced garlic, rosemary, and thyme. Sauté for about 1-2 minutes, until the garlic is fragrant but not burnt.

              Combine: Return the steak bites to the skillet and gently toss them in the garlic butter sauce to coat.

                Serve: Plate the roasted potatoes alongside the garlic butter steak bites. Drizzle any remaining garlic butter over the top and garnish with fresh parsley.
